Edible Portion (EP)
Edible Portion
Fillet apps use edible portion to do calculations like ingredient quantities and food cost.
Overview
Edible Portion (“EP”) is the usable part of an Ingredient. This is also known as usable portion.
For any Ingredient, you can set what percentage (%) of that Ingredient is usable or edible.
If you don’t set an edible portion for an ingredient, Fillet apps will use the default setting, which is 100%.
Example
Recipe: Vegetable soup
Ingredient | Amount in Recipe | Edible Portion (%) | Required Quantity |
---|---|---|---|
Olive oil | 100 mL | Not set | 100 mL |
Potatoes | 1.8 kg | 90% | 2.0kg |
Onions | 3 kg | 80% | 3.75 kg |
Carrots | 12 each | 75% | 16 each |
Tip: Edible Portion can be used together with Abstract Units, for example, “each”.
